We have in a large bowl the flour and salt, we mix. Add two tablespoons of extra virgin olive oil and dissolve the fresh yeast (very important) in slightly warm water, ideally it is at body temperature, about 36.0 degrees, and then pour it slowly to the flour at the same time you mix everything with the other hand.

Add the mushrooms to a saucepan with boiling water, 1 minute later pass them to ice water to cut the cooking, and you will have some shiitake that look fresh, keep in mind that they will increase considerably in size in the water.
Once the time has elapsed, it will have almost doubled in size, flour once more the table and a rolling pin, crush lightly with your hands and go to stretch the dough.
Turn it from time to time, stretch on both sides, and go flouring them little by little, that does not stick or break.
Ready the mass, stretched and beautiful, we pierce with the teeth of a fork for all the mass, leaving the edges of margin, with the thickness that we want.
In this way, the part that we have punctured will not grow too much in the oven, and we will get a tender and juicy edge.
We have slices of fresh buffalo mozzarella in the center, as dictated by the recipe, as it will greatly affect the flavor of this wonderful pizza, and the laminated shiitake (the shiitake is already added to us, it gives it a certain touch).
We put it in the oven previously heated to 220ºC - 250ºC. When the mozzarella is au gratin and the edges have acquired an appetizing golden color, we remove it from the oven and finely laminate on it the black truffle that will give it an intense and delicate aroma.
