Dehydrated Murgules Morel
The morel mushroom, also known as Murgules, is a spring mushroom that appears just after thaws. Irregular seasons and difficult to harvest, it is undoubtedly the most appreciated mushroom for its aromatic characteristics.
You can use the dehydrated morel in many dishes. The interior is hollow, so many of its culinary applications involve filling this interior with the best foie gras or sauces. It is common to make dishes combining morels with truffles.
How to preserve dehydrated mushrooms?
As it is a dehydrated product, it must be kept in a dry environment. A glass jar with a tight lid away from heat sources would be an appropriate place.
How to hydrate dehydrated mushrooms?
Boiling them in water for 1 minute or letting them soak for 1 hour.
Once hydrated they can be used as if they were fresh and their size will increase approximately 10 times. (10g dehydrated mushrooms = 100g fresh mushrooms).
