Mini Andalusian calçots with truffle carpaccio

  • Mini calçots 10u
  • Harina 100g
  • Huevo 2u
  • Carpaccio de trufa de verano al gusto
  • Aceite de trufa negra, sal y pimienta al gusto de cada uno


  • We will clean the mini calçots, removing the first layer and cutting the two parts.
    We will pass them through flour and then through an egg and fry it with hot oil.
    Once fried, we will drain them from the oil and plate it.
    We will add the truffle carpaccio slices on top.
